The College Restaurant’s credo is “Experience the art of food”
The tasteful setting of the former school where history is still tangible means that gastronomy enthusiasts are already feeling at home before they’ve even started eating. The dishes are prepared by the kitchen staff with passion, they may have an international touch but their origins are rooted in the Dutch kitchen.
They may be served with a modern touch, but the meals created by the kitchen staff are an ode to the glory years of the Dutch Golden Age. Chef Mark van Duijn makes subtle use of new techniques, but just enough to give them a contemporary touch, not to fundamentally change them. His love for the profession, eye for detail and use of honest and fresh products ensure that the dishes he creates are always of the highest standard.
In The College Hotel Amsterdam guests enjoy many modern international courses, prepared with local and seasonal ingredients that have been produced sustainably. We use Dutch beef, Livar pork, local cheeses and sustainably caught fish, for example. During the summer months, we serve a variety of different summer specialities.
